Classic Carrot Bran Muffins
With the flavours of cinnamon and nutmeg and studded with raisins, these muffins are a classic for a reason.
Ingredients
- 300 ml or 1 1/4 cups all-purpose flour
- 5 ml or 1 tsp ground cinnamon
- 2 ml or 1/2 tsp ground nutmeg
- 2 ml or 1/2 tsp baking soda
- 7 ml or 1 1/2 tsp baking powder
- 1 ml or 1/4 tsp salt
- 375 ml or 1 1/2 cup All-Bran Original* cereal
- 300 ml or 1 1/4 cup milk
- 50 ml or 1/4 cup vegetable oil
- 75 ml or 1/3 cup molasses
- 1 egg
- 250 ml or 1 cup grated carrot
- 125 ml or 1/2 cup raisins
Directions
1. Combine flour, baking powder, cinnamon, nutmeg, soda and salt. Set aside.
2. In large bowl, combine cereal and milk. Let stand for 4 minutes or until cereal is softened. Add oil, molasses and egg. Beat well. Stir in carrots and raisins.
3. Add flour mixture, stirring just until combined. Portion batter evenly into 12 lightly-reased muffin pan cups.
4. Bake at 200°C (400°F) about 20 minutes or until firm to the touch.
